Oh yes! The holidays are right around the corner, and that means baking and candy making in this house! Many many years ago (25 to be exact) I had the great pleasure of connecting with a very wise and wonderful woman. Her name was Linda, and she made the best lemon cream surprise (I really have no idea the exact name of this dessert) that you will ever eat in your entire life! The holidays at Linda’s house were always incredible. The food was cooked to perfection and the desserts were flawless and delightful. Baking and candy making for the holidays always started before Thanksgiving. And when you made something, you made enough for both Thanksgiving and Christmas and stored them in the freezer until you needed them. We would spend an entire weekend in the kitchen. Lots of sugar and many many dozens of cookie later we had a freezer full of goodies. Cookies, peanut brittle, candy and of course fudge! My favorite is by far this super easy Peanut Butter Fudge.
The best part about this Peanut Butter Fudge? It calls for just FOUR ingredients! Not to mention it takes just 3 minutes to make. You can have a batch …. or 10 of this fudge made and ready to enjoy in very minimal time! Here is how you can make this for your family this holiday season.
2 Cups sugar
1/2 Cup milk
1 tsp. vanilla
2/4 Cup peanut butter
(optional) 1/2 Cup Chocolate Chips
In a medium sauce pan combine the sugar and milk. Bring to a full boil. Boil the milk and sugar mixture for 2 minutes.
After 2 minutes, remove from the heat and add in the peanut butter and vanilla. Mix well and pour into an 8 x 8 pan. Top with chocolate chips if you like. Let cool completely before slicing into squares.
It is that easy! honest!
Writing this post has brought back some wonderful memories of my dear friend Linda and all the time we would spend around the holidays in her kitchen. So many of the traditions she shared with me I have since passed on to my own children. Family traditions are so important to everyone’s life. Making memories together and celebrating all that you have and all that you love.
So on that note …. Thank You Linda! I owe so much of the mom and woman I have become to you. Cheers!
