
My gosh this week has been a little overwhelming and hectic. If you follow me on Facebook, you may have seen me say how we are moving this weekend. The crazy part is we just found out 2 weeks ago that we were moving! Crazy right? We have only lived here two and a half years, and we have accumulated so much stuff it’s insane. I don’t know where on earth all of this came from… ok maybe I might have a small shopping habit (it’s not a problem, I can stop anytime I want! .. oh look a shoe sale!) Seriously though, I am trying very hard not to go to the grocery store before the move unless we need something a.s.a.p (like coffee creamer). I am trying to use what I have in the pantry and fridge so we don’t have to transport as much to the new house. When dinner time rolled around last night, I was torn between kielbasa or chicken legs (yuk, but the teens love them). After poking around in the pantry for a few minutes I had just what I needed to make this hearty, comforting ONE POT Kielbasa and Onion Pasta.

As soon as I took the first bite, I knew I had to share how I made it with you guys. Since you all went gaga over the Crock Pot Pierogi Casserole with Kielbasa, I just knew you would love this one too! The flavors were outstanding, and guess what? This is a ONE POT dish! Yep, one pot to cook in, one pot to clean. Easy peasy!

ONE POT Kielbasa and Onion Pasta
Ingredients:
- 2 Tablespoons oil
- 1 large onion – chopped
- 1 14 oz package smoked kielbasa sliced into coins
- 2 cloves garlic – chopped
- 4 cups chicken broth
- 2 10 oz cans petite diced tomatoes (do not drain)
- 1 cup whole milk
- 1 Tablespoon chopped parsley
- 1 16 oz. box penne pasta
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- salt & pepper to taste
Directions:
In a deep skillet (I used my 12-inch electric skillet) on medium heat, heat the oil. Once the oil is hot, saute the onions and kielbasa. Until the onions are translucent and the kielbasa has a nice crust around the edges.
Add in the garlic, stir and cook for a minute or two until soft. Be careful not to burn it.
Add the chicken broth, diced tomatoes, milk, parsley and pasta. Cook until the pasta is al dente. Stirring often so it doesn’t stick to the bottom of the skillet.
Once the pasta is al dente, season with salt and pepper to taste.
Top with both types of cheese. Remove from the heat and put a lid on your skillet. Just to help melt the cheese.
Serve with crusty garlic bread to sop up all of that flavorful sauce!
Not a fan of Kielbasa? This recipe can also be made with chicken, pork or even bacon if you like!
