
I don’t know about you but I have two of the pickiest teens on the planet! Even getting them to eat fruit is an all out argument some times. Sure apples, bananas maybe even an orange now and then is manageable. Anything other than the “basics” is like pulling teeth and an absolute no way! Well, that is all about to change!
Last week I got a really good deal on strawberries and blackberries and I had them in the fridge for a few days. No one would eat them and I didn’t want them to go to waste. I decided to use them to make this incredible Strawberry Blackberry Oatmeal Crumble. At least this way I could have something that freezes well and I could also enjoy a piece as part of a healthy breakfast.
After mixing up the very basic, but delicious ingredients and popping it in the oven, I had both teens making comments like …. “Ohh that’s smells good!” … “What are you making? It smells pretty good“.
I didn’t try to cover up what I was making at all. I told them exactly what it was and that it was a lot like an oatmeal cookie with fruit in the middle. Which it really does remind me of a soft and moist oatmeal cookie. They peeked a little interest as soon as I said the word cookie! But I still didn’t expect them to even try it when it was done.
After the crumble was done baking, I let it cool for just a few minutes, I couldn’t contain myself much longer than that! I sliced up a piece for myself and topped it with a little cool whip. Was heavenly I must say. Enter the 13 year old pickiest of picky teens, looks at my plate in admiration (haha). When I asked him if he wanted to taste it, to my absolute shock and amazement the answer was YES! Wait, what? but it has berries! The grin on his face made my night for sure, and I very happily dished up a good size piece for him quickly, before he changed his mind. He ate every sweet little crumb. I didn’t even find the berries picked out and shoved off to the side, he ate those too.
As with all picky eaters, the older they get the more they are willing to try new things. I mean seriously, it’s BERRIES what’s so strange about that? Heck, it’s no stranger than one of the boys claiming to not like bacon, and another claiming to not like chocolate! (Really? Are these even MY children?) But they are coming around in time, Thankfully!
Here is how we made this fabulous Strawberry Blackberry Oatmeal Crumble…
Ingredients:
- 3 cups mixed berries (1 1/2c. strawberries 1 1/2 c blackberries)
- 2 Cups Quick Oats
- 1 Cup all purpose flour
- 1 Cup light brown sugar
- 3/4 Cup butter – room temperature
- 1 tsp salt
- 1 tsp baking soda
- cinnamon sugar mix (optional)
Directions:
Clean and cut berries into small pieces. Coat with 2 Tablespoons white sugar. Set aside.
Preheat oven to 350 degrees
In a medium bowl mix remaining ingredients until a crumble mixture forms. I like to use my hands for this part. Break up the butter pieces so its distributed throughout the entire mixture.
Press 1/2 of the crumb mixture into a 9×13 baking pan.
pour the macerated berries on top.
Top with remaining crumb mixture. Sprinkle top with cinnamon sugar if desired (2 tsp sugar, 1 tsp cinnamon)
Bake for 25 – 30 minutes just until edges are golden brown.
If you like an extra crunchy top, broil for 2 – 3 minutes.
To freeze these scrumptious little squares of happiness, simply cut to the size you prefer and wrap tightly with plastic wrap. They will stay good in the freezer for 1 – 2 months if wrapped well. Simply take out as needed and let it thaw on the counter. You could also pop the frozen bar in the microwave for 30 seconds to 1 minute and serve warm.
