Easy Mexican Rice with chicken – Weeknight Meal

This week with so many school activities and work meetings going on, dinner around our house needs to stay simple and easy to prepare. When I was planning our menu this week, I had to take all of that into consideration. Luckily I had a few things  ready to go and already prepared in the freezer. (See all our FREEZER cooking tips HERE). I had to make a few quick & easy meals to fill in for the ones I didn’t want to use from the freezer. That’s where these awesome Knorr Sides come in. Im a big fan of quick & easy if you can’t tell already, so this one was right up my alley. Quick & Easy Mexican Rice with Chicken is a satisfying and hearty weeknight meal for all. Paired with classic cornbread from Jiffy you can have this ready in less than 20 minutes.

Quick & Easy Mexican Rice with Chicken: Daily DIY Life.com

What you will need: 

2 chicken breasts (cooked and cubed)

1 package Knorr  Taco Rice Side dish

1 10 oz. can petite diced tomatoes

Toppings (optional): Cheddar cheese, sour cream, sriracha

Prepare the rice according to the package directions. 10 minutes is all it takes!

Add the cubed chicken and tomatoes. Heat through 3 – 4 minutes.

Serve with your favorite taco toppings and Jiffy Cornbread muffins. Makes 5 1 cup servings.

Knorr sides come in so many different  flavorful varieties. You could incorporate chicken or beef to so many of the sides to make a complete meal. A little crusty bread and a side salad and you are ready to go. Find them in all major grocery stores at a very reasonable price (usually $1 to $1.50 per package.)

This complete meal costs less than $10 including our toppings! Now that is the kind of meal that my budget loves.
